Tamarind Cod Supper

A brisk, home-friendly Indian supper centered on gently spiced, tamarind-glazed baked cod, balanced with fragrant cumin basmati rice and a cooling cucumber raita — bright, family-friendly flavors executed in a compact, 40-minute cook window.

  • Cuisine: Indian
  • Serve time: 5:00 PM

This simple three-component menu delivers an authentic Indian profile without fuss: flaky tamarind- and ginger-scented baked cod as the centerpiece, a lightly spiced jeera (cumin) basmati rice that holds well for family service, and a cooling cucumber raita to soothe and refresh. Each component is straightforward, uses common ingredients, and the plan staggers work so one cook can finish everything within the hour.

  • Cooling Cucumber Raita

2. FULLY EXECUTABLE RECIPES

Tamarind-Ginger Baked Cod

Equipment

  • Rimmed baking sheet (18 x 13 inches)
  • 1 medium mixing bowl (2–3 qt)
  • Microplane or fine grater
  • Rubber spatula or spoon
  • Measuring spoons
  • Instant-read thermometer (recommended)
  • Aluminum foil or parchment

Ingredients

  • 32 oz cod fillets, skinless (about five 6-oz portions)
  • 2 tbsp tamarind paste
    • Practical substitution: if tamarind paste is unavailable, use 2 tbsp fresh lemon juice (use a whole lemon from Produce).
  • 2 tbsp neutral oil (vegetable or canola)
  • 1 tbsp fresh ginger, finely grated (about 1 oz)
  • 2 cloves garlic, minced (about 2 tsp)
  • 1 tsp ground turmeric
  • 1 tsp ground cumin
  • 1 tsp garam masala
  • 1 tsp granulated sugar
  • 1 tsp kosher salt
  • 1/4 tsp ground black pepper
  • 1/2 cup cilantro, chopped (for garnish)

Cooking / Baking

  • Oven temperature: 425°F
  • Target internal temperature for fish: 145°F (when checked at the thickest part)
  • Total cook time (including oven preheat and active prep): 28 minutes

Instructions

  1. Preheat and prep: Place the empty rimmed baking sheet in the oven? No — preheat oven later per timeline. (See timeline for exact preheat start.) Line the baking sheet with foil or parchment.
  2. Make the paste: In the mixing bowl combine tamarind paste, neutral oil, grated ginger, minced garlic, turmeric, ground cumin, garam masala, sugar, kosher salt, and black pepper. Stir until smooth.
  3. Coat the fish: Pat fillets dry with paper towels. Transfer fillets to the bowl and gently turn to coat every fillet with the paste; use the spatula to evenly distribute. Arrange fillets on the prepared baking sheet with small space between pieces.
  4. Bake: When oven is at 425°F, place the baking sheet on the middle rack and bake 12–14 minutes. Start checking at 12 minutes: insert an instant-read thermometer into the thickest fillet; once it reads 145°F, remove the sheet. If you do not have a thermometer, the fish should flake easily and be opaque throughout.
  5. Rest & garnish: Let fish rest on the sheet 2–3 minutes (short rest to settle). Scatter chopped cilantro over fillets just before plating.
  6. Plate: Transfer fillets to serving platter and serve immediately.

Jeera (Cumin) Basmati Rice

Not dairy-free: ghee.

Equipment

  • Medium saucepan with tight-fitting lid (3 qt)
  • Fine-mesh sieve or bowl for rinsing rice
  • Measuring cups and spoons
  • Fork for fluffing

Ingredients

  • 3 cups basmati rice (uncooked)
  • 4 1/2 cups cold water
  • 2 tbsp ghee (or unsalted butter)
    • Practical substitution: use 2 tbsp neutral oil if ghee is unavailable.
  • 2 tsp whole cumin seeds
  • 1 1/2 tsp kosher salt

Cooking / Baking

  • Stove setting: bring to boil, then low simmer
  • Total cook time (active and passive on stove, including brief rinse/sauté): 25 minutes

Instructions

  1. Rinse: Place rice in a fine-mesh sieve and rinse under cold running water until water runs mostly clear (about 1–2 minutes). Shake off excess water.
  2. Sauté cumin and rice: In the saucepan over medium heat, melt ghee for 30 seconds, add cumin seeds and toast 20–30 seconds until aromatic (do not burn). Add rinsed rice and stir to coat 1–2 minutes.
  3. Boil and simmer: Add 4 1/2 cups cold water and 1 1/2 tsp kosher salt. Increase heat to high and bring to a rolling boil; once boiling, stir once, cover, reduce heat to the lowest simmer, and cook undisturbed for 15 minutes.
  4. Rest & finish: Remove from heat and let rice rest, covered, 5 minutes. Uncover and fluff with a fork just before serving.

Cooling Cucumber Raita

Not dairy-free: milk.

Equipment

  • Medium mixing bowl
  • Box grater or large-holed grater
  • Spoon and measuring spoons

Ingredients

  • 3 cups plain whole-milk yogurt
  • 1 large cucumber (about 10–12 oz)
  • 1 tsp kosher salt
  • 1 1/2 tsp ground cumin (preferably roasted; see substitution)
    • Practical substitution: use 1 1/2 tsp cumin seeds lightly toasted and crushed if roasted ground cumin unavailable.
  • 2 tbsp cilantro, chopped
  • 1 tbsp fresh lemon juice

Cooking / Baking

  • No cooking required
  • Total prep time: 10 minutes

Instructions

  1. Prepare cucumber: Peel (optional) and grate the cucumber on the large side of a box grater. Place grated cucumber in a sieve or towel and press out excess water (about 1–2 minutes).
  2. Mix raita: In the bowl combine 3 cups yogurt, drained grated cucumber, 1 tsp kosher salt, 1 1/2 tsp ground cumin, 2 tbsp chopped cilantro, and 1 tbsp lemon juice. Stir until smooth.
  3. Chill briefly: If time allows, refrigerate 10–15 minutes for flavors to meld. Otherwise keep cool until serving. Stir once before serving.

3. LINEAR TIMELINE (4:20 PM–5:00 PM)

  • 4:20 PM: (Jeera Rice) Start: Rinse 3 cups basmati rice under cold water (1–2 minutes). Shake off excess water.
  • 4:22 PM: (Jeera Rice) In medium saucepan, melt 2 tbsp ghee over medium heat. Add 2 tsp cumin seeds and toast 20–30 seconds until aromatic. Add rinsed rice and stir to coat 1–2 minutes.
  • 4:25 PM: (Jeera Rice) Add 4 1/2 cups cold water and 1 1/2 tsp kosher salt; bring to a rolling boil over high heat.
  • 4:27 PM: (Fish & Rice) (Fish) Begin tamarind-fish work window: preheat oven to 425°F now; while oven preheats, assemble tamarind-ginger paste and coat fish (mix paste and coat fillets — about 8 minutes).
  • 4:27 PM: (Jeera Rice) Reduce heat to lowest, cover pot and simmer undisturbed for 15 minutes.
  • 4:32 PM: (Cooling Cucumber Raita) While rice simmers and oven preheats, grate cucumber, press out excess water, and combine raita ingredients (about 8 minutes). Chill raita in refrigerator or keep covered on counter.
  • 4:42 PM: (Fish) Oven should be at ~425°F. Arrange coated cod on lined rimmed baking sheet and place on middle rack; bake 12–14 minutes.
  • 4:42 PM: (Jeera Rice) Rice simmer finishes at 4:42; remove from heat and keep covered to rest 5 minutes.
  • 4:47 PM: (Jeera Rice) Uncover rice and fluff with fork; keep covered/warmer on stove (rice holds well while fish finishes).
  • 4:54 PM: (Fish) Check fish at 12 minutes: insert instant-read thermometer in thickest fillet; remove when 145°F. If using flake test, ensure opaque and flaky. Remove sheet; let rest 2–3 minutes on counter.
  • 4:55 PM: (All components) Quick final check: taste rice for salt and stir; give raita a last stir and scrape into serving bowl; transfer rice to warm serving dish.
  • 4:58 PM: (Fish) Garnish fish with chopped cilantro and transfer to serving platter; final plating.
  • 5:00 PM: (All) Serve at table — all components ready.

4. CONSOLIDATED SHOPPING LIST

Produce

  • 1 large cucumber (for raita) — 1 item
  • 1 lemon — 1 item
  • 1 bunch cilantro — about 1 bunch (you will use 3/4 cup chopped) ⁺
  • 1 head garlic — use 2 cloves
  • 1 piece fresh ginger — about 1 oz (yields 1 tbsp grated)

Meat / Seafood

  • Cod fillets, skinless — 32 oz (2 lb)

Dairy

  • Plain whole-milk yogurt — 3 cups (24 fl oz)

Dry Goods / Pantry

  • Basmati rice — 3 cups (uncooked)
  • Tamarind paste — 2 tbsp
  • Neutral oil (vegetable or canola) — 2 tbsp
  • Ghee — 2 tbsp
  • Kosher salt — 3.5 tsp ⁺
  • Ground black pepper — 1/2 tsp ⁺
  • Ground cumin — 1.5 tsp ⁺
  • Cumin seeds (whole) — 2 tsp
  • Garam masala — 1 tsp
  • Ground turmeric — 1 tsp
  • Granulated sugar — 1 tsp

5. NOTES & ASSUMPTIONS

  • Optional table-side items: red chili flakes or bottled hot sauce for adults who want extra heat (add at table only).
  • Global substitution: if tamarind paste is unavailable, use 2 tbsp fresh lemon juice instead (listed lemon covers this).
  • Child-safety note: Keep children away from the oven and hot baking sheet at 4:42–4:56 PM. Use oven mitts and set the hot sheet on a heatproof surface; supervise transfer to serving platter.
  • Timeline risk(s): The tightest window is the fish bake/oven preheat overlap (4:27–4:54 PM). If the oven takes longer than expected to preheat, the fish bake will be delayed and compress plating time immediately before 5:00 PM.
  • Practical mitigation mindset: Start the oven preheat exactly at the timeline time and prep the fish paste while the oven preheats. If the oven lags, accept a slightly longer rest on the fish (1–3 minutes) and reheat rice briefly on the lowest burner covered for 1–2 minutes; keep raita chilled. Do not begin fish prep much earlier than scheduled — the plan expects fish prep during preheat.
  • Latest safe start time: You can start as late as 4:20 PM for a 5:00 PM serve.
