2. FULLY EXECUTABLE RECIPES

Stir-Fried Thai Basil Chicken (Pad Krapow Gai)

Equipment

  • 12-inch flat-bottom wok or 12-inch heavy skillet
  • Chef's knife, cutting board
  • Microplane or grater
  • Measuring spoons
  • Wooden spoon or spatula
  • Small bowl

Ingredients (serves 5)

  • 1.5 lb ground chicken (24 oz)
  • 2 tablespoons vegetable oil
  • 6 cloves garlic, peeled and minced (about 2 tablespoons)
  • 2 small shallots, thinly sliced (about 3 oz)
  • 3 tablespoons fish sauce
  • 2 tablespoons light soy sauce
  • 1 tablespoon oyster sauce
  • 1 teaspoon packed light brown sugar
  • 1/2 teaspoon ground white pepper
  • 2 cups packed fresh Thai holy basil leaves (about 2 oz) — see substitutions
  • 1 lime, cut into wedges (for serving)
  • Optional table-side: 6 fresh bird’s eye chilies, sliced (NOT cooked into the shared base) ⁰

Practical substitutions

  • If Thai holy basil is unavailable, substitute 2 cups packed sweet basil leaves plus 1/4 cup roughly chopped cilantro (adds bright note). Marked substitution still authentic in typical grocery.

Cooking / Baking

  • Total cook time: 25 minutes (15 minutes active prep + 8–9 minutes stovetop cook + 1–2 minutes plating)

Instructions

  1. Prep (15 minutes): Mince garlic, thinly slice shallots, measure sauces and sugar into a small bowl and stir to combine (fish sauce, light soy, oyster sauce, brown sugar, white pepper). Pick basil leaves off stems and keep whole; loosely pile them and set aside.
  2. Heat wok/skillet over high heat until hot (1–2 minutes). Add 2 tablespoons vegetable oil and swirl to coat.
  3. Add minced garlic and sliced shallots; stir-fry 60–90 seconds until aromatic and begins to color at the edges — do not burn.
  4. Add ground chicken, spread it out in the pan, and let sit 20–30 seconds to brown, then stir and break up the meat. Stir-fry 5–6 minutes until cooked through and no pink remains.
  5. Pour in the sauce mixture; stir constantly 60–90 seconds so sauce reduces slightly and coats the chicken.
  6. Remove pan from heat briefly, add basil leaves and toss 20–30 seconds until basil wilts but remains bright green.
  7. Plate immediately, serve with lime wedges and optional sliced bird’s eye chilies on the side for anyone wanting heat.

Steamed Jasmine Rice

Equipment

  • 3-quart heavy-bottom saucepan with tight-fitting lid
  • Fine-mesh sieve
  • Measuring cups and spoons

Ingredients (serves 5)

  • 2.5 cups jasmine rice (uncooked)
  • 3.125 cups cold water (3 cups + 2 tablespoons)
  • 1/2 teaspoon kosher salt
  • 1 teaspoon vegetable oil ⁺

Practical substitutions

  • If jasmine rice is unavailable, use long-grain white rice; increase water to 3.75 cups and follow package timing.

Cooking / Baking

  • Total cook time: 38 minutes (3 minutes rinse + 5 minutes to boil + 18 minutes simmer + 12 minutes rest)

Instructions

  1. Measure 2.5 cups jasmine rice into a fine-mesh sieve. Rinse under cold running water, rubbing gently, until the rinse water runs clear (about 3 minutes). Drain thoroughly.
  2. Transfer rinsed rice to the 3-quart saucepan. Add 3.125 cups cold water, 1/2 teaspoon kosher salt, and 1 teaspoon vegetable oil; stir once.
  3. Put saucepan over high heat uncovered and bring to a rolling boil (about 4–6 minutes).
  4. When boiling, immediately reduce heat to low, cover tightly, and simmer gently for 18 minutes without lifting the lid.
  5. After 18 minutes, turn off heat and keep lid on; let rice rest, undisturbed, for 12 minutes. Fluff with fork just before serving. (Rice will be ready at the serve time in the timeline.)

Thai Cucumber Salad

Equipment

  • Medium mixing bowl
  • Sharp knife and cutting board
  • Measuring spoons and cup
  • Small jar with lid (for dressing)

Ingredients (serves 5)

  • 2 large English cucumbers (about 1.25 lb), halved lengthwise and thinly sliced (about 4 cups sliced)
  • 1 small shallot, very thinly sliced (about 1.5 oz)
  • 3 tablespoons rice vinegar
  • 2 tablespoons granulated sugar ⁺
  • 1 teaspoon kosher salt
  • 2 tablespoons fresh lime juice (about 1 lime) ⁺
  • 1/4 cup cilantro leaves, roughly chopped
  • 1 teaspoon toasted sesame oil (optional, adds aroma)

Practical substitutions

  • If rice vinegar is not stocked, use 1 tablespoon white vinegar plus 2 tablespoons water.

Cooking / Baking

  • Total cook time: 12 minutes (10 minutes prep + 2 minutes finish-to-order toss)

Instructions

  1. Slice cucumbers thin (1/8–1/4 inch) and place in medium bowl. Add thinly sliced shallot.
  2. In small jar combine rice vinegar, sugar, salt, lime juice, and sesame oil (if using). Close jar and shake until sugar dissolves.
  3. Hold dressing aside in the jar. Just before plating (within ~5 minutes of serve), pour dressing over cucumbers, add cilantro, toss gently and transfer to serving bowl. Serve immediately.

Crispy Fried Eggs (5)

Equipment

  • 10-inch or 12-inch nonstick skillet
  • Spatula
  • Paper towels, plate

Ingredients (serves 5)

  • 5 large eggs
  • 3 tablespoons vegetable oil ⁺
  • 1/4 teaspoon kosher salt
  • 1/8 teaspoon ground white pepper

Cooking / Baking

  • Total cook time: 10 minutes (includes frying in two batches if needed)

Instructions

  1. Heat skillet over medium-high heat. Add 1 tablespoon oil and swirl to coat.
  2. Crack 2–3 eggs into the skillet (do not crowd; do 3 then 2). Immediately reduce heat to medium.
  3. Fry until the edges are deeply golden and crisp and the whites are set, 2–3 minutes. Spoon hot oil over whites to help set if needed for kids who prefer fully cooked whites.
  4. Season each egg with a small pinch of salt and white pepper. Transfer to paper-towel-lined plate to drain. Fry remaining eggs in the same manner; total time for two batches ~8–10 minutes. Serve hot on top of Pad Krapow.

Fresh Tropical Fruit Platter

Equipment

  • Chef's knife, cutting board
  • Large platter
  • Peeler

Ingredients (serves 5)

  • 2 ripe mangoes
  • 1 fresh pineapple (about 2–2.5 lb) or 3 cups pre-cut pineapple
  • 2 medium bananas
  • 1 lime for optional squeezing ⁰

Practical substitutions

  • If mangoes are not ripe in store, substitute with 3 cups ripe papaya or pre-cut mixed tropical fruit from produce section.

Cooking / Baking

  • Total cook time: 15 minutes (all prep, no heat)

Instructions

  1. Peel and cut mangoes into slices or cubes. Peel and core pineapple; cut into bite-size pieces. Slice bananas just before serving to avoid browning, or slice and squeeze lime juice lightly to slow browning.
  2. Arrange attractively on platter and hold at room temperature; bring to table within 15 minutes of service.

Sparkling Lime–Coconut Cooler (kid-friendly)

Equipment

  • Pitcher
  • Measuring cups and spoons

Ingredients (5 servings, 8 fl oz per serving)

  • 2.5 cups coconut water (20 fl oz)
  • 2.5 cups chilled sparkling water (20 fl oz)
  • 5 tablespoons fresh lime juice (from ~3 limes) ⁺
  • 5 tablespoons simple syrup (or granulated sugar dissolved in 2 tablespoons hot water) ⁺
  • Ice and lime slices for serving

Practical substitutions

  • If coconut water is unavailable, use chilled light coconut milk diluted 1:1 with water (richer) or use chilled plain sparkling water with a splash of pineapple juice.

5. NOTES & ASSUMPTIONS

  • Optional table-side items: sliced bird’s eye chilies and extra lime wedges for anyone who wants added heat or acidity (marked ⁰ in shopping list).
  • Substitutions that apply globally: If Thai holy basil is unavailable, use sweet basil + a small amount of cilantro as listed in the Pad Krapow recipe.
  • Child-safety notes: Keep optional sliced chilies and the hot wok/skillet out of children's reach. Children should not handle sharp knives during fruit prep.
  • Timeline risk(s): The tightest execution window is 4:50–5:00 PM when the cook finishes the Pad Krapow and simultaneously fries eggs and dresses the salad. This requires managing two pans and staying organized; it is risky because both finish-to-order components must complete within ~10 minutes.
  • Practical mitigation mindset: Pre-measure and position all sauce components, have the second skillet and spatula ready and heated at 4:50, and use the rice pot lid and a timer. If pressed, finish Pad Krapow one minute earlier and keep it very briefly on lowest heat while frying eggs — do not let the basil overcook; alternatively, fry eggs in the largest pan possible to reduce batches.
  • Latest safe start time: You can start as late as 4:12 PM for a 5:00 PM serve.
