Thai Thursday Family Supper

A balanced Thai weeknight menu built for family service: a bright, saucy Pad Thai finished to order, a comforting green chicken curry that holds, fragrant steamed jasmine rice, and a crisp cucumber relish — all tuned to a medium shared spice level and an off-dry Riesling pairing.

1. FINAL MENU

  • Name of the meal: Thai Thursday Family Supper
  • Cuisine type: Thai
  • Serve time: 17:00

This meal pairs a lively finish-to-order Pad Thai — soda-lime tang from tamarind and crunchy roasted peanuts — with a coconut-silk green chicken curry that can rest under a lid while you finish the noodles, backed by steaming jasmine rice and a quick Thai cucumber relish for brightness; the contrast of textures and clean citrus notes make a weeknight family meal feel deliberate and worth the table. An alcohol-free Thai limeade keeps the kids included while an off-dry Riesling complements the curry's aromatics and the Pad Thai's sweet-sour balance.

  • Pad Thai with shrimp, eggs, roasted peanuts, bean sprouts and chives
  • Green chicken curry (Thai green curry) with eggplant, red pepper, bamboo shoots and Thai basil
  • Steamed jasmine rice
  • Thai cucumber relish (Ajaad)
  • Thai limeade (Nam Manao) — kid-friendly drink
  • Off-dry Riesling, 1 bottle — adult beverage

2. FULLY EXECUTABLE RECIPES

Pad Thai with shrimp, eggs, roasted peanuts, bean sprouts and chives

Equipment

  • 1 large wok or 30 cm frying pan
  • 1 medium mixing bowl
  • 1 small saucepan (for warming sauce ingredients if needed)
  • 1 cutting board and chef’s knife
  • 1 spatula or wok spatula
  • Measuring spoons and cup, kitchen scale
  • Large shallow bowl for noodle soaking (or mixing bowl)

Ingredients (serves 4)

  • Rice noodles (dried), 400 g
  • Raw shrimp, peeled and deveined, 400 g
  • Large eggs, 4
  • Roasted unsalted peanuts, 100 g
  • Fresh bean sprouts, 200 g
  • Fresh chives (or green onions), 100 g, cut into 4 cm lengths
  • Garlic, 15 g (about 3 cloves), minced
  • Shallots, 60 g (about 1 medium), thinly sliced
  • Vegetable oil (neutral), 60 ml (4 tbsp)
  • Fish sauce, 90 ml (6 tbsp)
  • Tamarind paste, 45 g (3 tbsp)
  • Palm sugar, 45 g (3 tbsp) — or light brown sugar 45 g (sub)
  • Lime, 1 for wedges (plus additional for garnish; limes are listed in shopping)
  • Ground white or black pepper, 1 g (1/4 tsp)
  • Dried red chili flakes for table (adult add-on) — not used in the shared base; include at table

Practical substitutions

  • Tamarind paste: if unavailable, substitute 45 g dark brown sugar + 30 ml fresh lime juice, mixed into sauce (flavor will be less fruity).
  • Palm sugar: substitute light brown sugar 1:1.
  • Chives: substitute scallions (green parts) if not available.

Cooking / Baking

  • Total cook time: 40 minutes (includes 25-minute noodle soak; active stir-fry time ~12 minutes)

Instructions

  1. (Soak noodles) Place 400 g rice noodles in a large shallow bowl. Cover with very warm tap water (~40–45 °C) so noodles are submerged. Soak 25 minutes; they should be pliable but not mushy. Drain and set aside in colander; keep a little soaking water.
  2. (Prep sauce & peanuts) While noodles soak, in a small bowl combine tamarind paste 45 g, fish sauce 90 ml, palm sugar 45 g. Stir until sugar dissolves; if needed warm gently in a small saucepan over low heat for 30–60 seconds then cool. Coarsely chop 100 g roasted peanuts. Reserve 2 tbsp peanuts for garnish.
  3. (Preheat wok) Heat large wok over high heat until hot; add 1 tbsp (15 ml) vegetable oil and swirl.
  4. (Cook shrimp) Add half the minced garlic (7 g) and sauté 10–15 seconds. Add shrimp 400 g in a single layer; sear 1–2 minutes per side until just opaque (shrimp internal temp ~63 °C). Transfer shrimp to a plate.
  5. (Cook tofu or extra veg optional) If not using, continue to step 6.
  6. (Stir-fry) Add remaining vegetable oil (45 ml) to wok. Add sliced shallots and remaining garlic, fry 30–45 seconds until fragrant. Push aromatics to side, add eggs (4) to the clean center, scramble quickly until just set (about 1 minute).
  7. Immediately add drained noodles and 2–3 tbsp of the reserved noodle soak water to loosen. Pour the prepared Pad Thai sauce over noodles. Toss vigorously with spatula to combine and coat (2–3 minutes). Return cooked shrimp to wok, toss to heat through. Add bean sprouts 200 g and chives 100 g; toss 30 seconds to wilt slightly.
  8. Taste; adjust by adding 1 tsp fish sauce or 1 tsp palm sugar only if needed (do not add hot chilies). Season with 1 g ground pepper.
  9. Plate immediately; sprinkle chopped peanuts and reserved 2 tbsp peanuts, serve with lime wedges (cut remaining limes per menu) at the table.

5. NOTES & ASSUMPTIONS

  • Optional table-side items: dried red chili flakes and extra fish sauce for adults to adjust heat/salt at the table.
  • Global substitution notes: tamarind paste may be replaced with 45 g dark brown sugar + 30 ml lime juice (Pad Thai will be less fruity). Palm sugar may be swapped with equal light brown sugar. Green curry paste sold jarred works; adjust to brand heat by reducing amount.
  • Child-safety notes: shrimp should be checked for doneness (opaque, 63 °C internal); cut large pieces into child-bite sizes before serving. Keep hot pans and boiling pot away from children's reach during final 15 minutes.
  • Timeline risk(s): the tightest window is the 16:48–17:00 final Pad Thai stir-fry and plating (finish-to-order). If noodles are over-soaked they become mushy; if under-soaked they will break in the wok. Mitigation: start noodle soak exactly at marked time, check pliability at 16:40 and adjust by draining immediately when flexible. Also keep wok and utensils prepped and within reach before 16:48.
  • Practical mitigation mindset: sequence mise en place so the final 12-minute stir-fry is uninterrupted — have sauce measured, peanuts chopped, noodles drained, and shrimp prepped and dried before preheating the wok. If something falls behind, briefly pause rice simmer (briefly lower heat) rather than rush the Pad Thai final stove work.
  • Latest safe start time: You can start as late as 16:05 for a 17:00 serve.
