Sunday Latin Family Supper

A bright, family-friendly Latin American supper centered on citrus-scented mojo-roasted pork loin with cilantro-lime rice, seasoned black beans, sweet fried plantains and a crisp lime slaw — straightforward techniques, strong leftovers potential and every finishing step timed so hot and crunchy items land at the table.

  • Cuisine: Latin American
  • Serve time: 5:00 PM

This meal is worth sitting down for because a succulent mojo-roasted pork loin carries vibrant citrus and garlic notes that marry with humble, well-seasoned black beans and cilantro-lime rice; sweet caramelized plantains add a kid-friendly crunchy-sweet counterpoint, while a fresh lime slaw brightens every bite — all timed so hot, crisp elements finish to order and the roast rests for easy carving and leftovers.

2. FULLY EXECUTABLE RECIPES

Mojo-Roasted Pork Loin

Equipment

  • 12-inch heavy ovenproof skillet (cast-iron preferred) or large ovenproof sauté pan
  • Instant-read meat thermometer
  • Cutting board, sharp chef’s knife
  • Small mixing bowl

Ingredients (serves 5; total quantities)

  • Boneless pork loin, center-cut — 3.0 lb
  • Fresh orange juice — 1 cup (from about 2 medium oranges)
  • Fresh lime juice — 1/4 cup (about 2 limes) ⁺
  • Garlic — 6 cloves, minced (about half a bulb) ⁺
  • Olive oil — 2 tbsp ⁺
  • Ground cumin — 1 tsp ⁺
  • Dried oregano — 1 tsp
  • Kosher salt — 2 tsp ⁺
  • Ground black pepper — 1 tsp ⁺

Practical substitutions

  • If fresh orange juice is not available, use 1 cup pasteurized orange juice from carton.
  • If fresh limes are scarce, substitute 3 tbsp bottled lime juice.
  • If pork loin is hard to find, a 3.0-lb boneless pork tenderloin may be used; reduce oven time — see internal temp guidance.

Cooking / Baking

  • Oven temp: 400°F. Target internal temp for pork loin: 145°F, then rest 10–15 minutes.

Total cook time

  • 78 minutes (8 min sear + 60 min roast + 10 min rest)

Instructions

  1. Remove pork from refrigerator 5 minutes before starting. Pat pork loin dry on all sides with paper towels; trim visible silver skin only.
  2. In a small bowl combine orange juice, lime juice, minced garlic, olive oil, ground cumin, dried oregano, 2 tsp kosher salt and 1 tsp black pepper. Stir to combine.
  3. Heat the 12-inch skillet over medium-high heat until shimmering. Swirl 1 tsp olive oil in pan.
  4. Rub pork all over with half the mojo mixture; reserve remaining mojo for serving. Sear pork in hot skillet 3–4 minutes per side, using tongs to brown the ends (total about 8 minutes). Do not crowd; brown firmly.
  5. Preheat oven to 400°F while searing. Transfer skillet with the seared pork to the preheated oven and roast until an instant-read thermometer inserted into the thickest part reads 145°F (expect ~60 minutes for a 3.0-lb loin). Check temperature at 50 minutes, then every 5–7 minutes until target reached.
  6. When pork reaches 145°F, remove skillet to a cutting board and tent loosely with foil; rest 10–15 minutes. Reserve pan juices — pour off fat and stir the reserved mojo mixture into the pan juices and pour into a small serving bowl for table (heat quickly on low if desired).
  7. At service, slice pork into 1/2-inch slices and arrange on warmed platter; spoon a little pan-moisture or mojo over just before serving.

Cilantro-Lime Rice

Not dairy-free: butter.

Not paleo: rice.

Equipment

  • 2-quart saucepan with tight-fitting lid
  • Fine-mesh sieve

Ingredients (serves 5)

  • Long-grain white rice — 2 cups (uncooked)
  • Water — 4 cups
  • Unsalted butter — 1 tbsp (or 1 tbsp olive oil)
  • Kosher salt — 1 tsp ⁺
  • Fresh cilantro — 1 cup packed, finely chopped (about 1 small bunch) ⁺
  • Fresh lime zest — 1 tsp and fresh lime juice — 2 tbsp (about 1 lime) ⁺

Practical substitutions

  • Use jasmine rice if long-grain white rice is unavailable (same cook time).

Cooking / Baking

  • Simmer covered over low heat; bring to boil then low simmer.

Total cook time

  • 30 minutes (20 min simmer + 10 min rest)

Instructions

  1. Rinse rice in fine-mesh sieve under cold running water until water runs almost clear; drain 1–2 minutes.
  2. In the saucepan bring 4 cups water and 1 tsp kosher salt to a boil. Add rice, stir once, cover, reduce heat to low so rice simmers gently; cook 18–20 minutes without lifting the lid.
  3. Remove from heat and leave covered 10 minutes to steam.
  4. Uncover, stir in 1 tbsp butter, chopped cilantro, lime zest, and 2 tbsp lime juice; fluff with fork and keep covered until serving.

Seasoned Black Beans (from canned)

Not paleo: black beans.

Equipment

  • 3-quart saucepan
  • Wooden spoon

Ingredients (serves 5)

  • Canned black beans — 2 (15-oz) cans, drained and rinsed
  • Vegetable or chicken broth — 1 cup
  • Yellow onion — 1 medium, finely diced
  • Garlic — 3 cloves, minced (remaining from bulb) ⁺
  • Olive oil — 1 tbsp ⁺
  • Ground cumin — 1 tsp ⁺
  • Dried oregano — 1/2 tsp
  • Bay leaf — 1
  • Kosher salt — 1 tsp ⁺
  • Ground black pepper — 1/2 tsp ⁺

Practical substitutions

  • Use 2 cups cooked black beans (home-cooked) instead of canned if you prefer; reduce added broth if beans are already saucy.

Cooking / Baking

  • Gentle simmer on stovetop.

Total cook time

  • 25 minutes

Instructions

  1. Heat 1 tbsp olive oil in the saucepan over medium heat. Add diced onion and cook 4–5 minutes until translucent.
  2. Add minced garlic and cook 30 seconds until fragrant.
  3. Add drained and rinsed black beans, 1 cup broth, 1 tsp ground cumin, 1/2 tsp oregano, bay leaf, 1 tsp kosher salt and 1/2 tsp black pepper. Stir and bring to a gentle simmer.
  4. Reduce heat to medium-low and simmer, uncovered, 15–20 minutes until flavors meld and liquid reduces slightly. Remove bay leaf. Keep covered off heat or on lowest burner to stay warm until service.

Fried Sweet Plantains (Maduros) — finish-to-order

Not paleo: vegetable oil.

Equipment

  • 10-inch heavy skillet (or 3-qt heavy saucepan) with lid available
  • Tongs or slotted spatula
  • Paper towels for draining

Ingredients (serves 5)

  • Ripe plantains — 5 medium (peel should be yellow with black spots)
  • Vegetable oil (neutral frying oil such as canola or sunflower) — 1.5 cups (for 1/2" deep fry)
  • Kosher salt — 1/2 tsp (to be sprinkled after frying) ⁺

Practical substitutions

  • If ripe plantains are unavailable, check frozen prepared plantains in the frozen aisle (adjust cook time per package) or use very ripe bananas for a sweeter, softer fry (texture will differ).

Cooking / Baking

  • Pan-fry in 1/2" oil heated to medium-high (oil shimmering but not smoking).

Total cook time

  • 15 minutes active (includes heating oil and frying in batches)

Instructions

  1. Peel plantains: cut both ends, score the peel lengthwise and remove skin. Slice plantains on the bias into 1/2-inch thick slices.
  2. Heat 1.5 cups vegetable oil in the skillet over medium-high until shimmering (about 350°F if using a thermometer). Oil is ready when a test slice sizzles on contact.
  3. Fry plantain slices in a single layer in batches (do not overcrowd) about 2–3 minutes per side until deep golden and caramelized. Use tongs to turn.
  4. Transfer fried plantains to paper towels; sprinkle total 1/2 tsp kosher salt evenly over all plantains. Keep warm and serve immediately — these should be finished within a few minutes of service for best texture.

Cabbage & Carrot Lime Slaw — finish-to-order

Not paleo: sugar.

Equipment

  • Large mixing bowl
  • Box grater or mandoline (for carrots)

Ingredients (serves 5)

  • Green cabbage — 1/2 small head (about 4 cups shredded)
  • Carrots — 2 medium, peeled and grated
  • Red onion — 1/4 small, very thinly sliced
  • Fresh cilantro — 1/2 cup chopped ⁺
  • Fresh lime juice — 2 tbsp (about 1 lime) ⁺
  • Olive oil — 1 tbsp ⁺
  • Granulated sugar — 1 tsp ⁺
  • Kosher salt — 1 tsp ⁺

Practical substitutions

  • Use pre-shredded coleslaw mix if short on time; thinly slice carrots instead of grating if grated carrot is not desired.

Cooking / Baking

  • No cooking; toss to dress at service time.

Total cook time

  • 10 minutes (prep and toss)

Instructions

  1. Shred cabbage, grate carrots, thinly slice red onion and combine all in a large bowl.
  2. At the final 10 minutes before serve, whisk together 2 tbsp lime juice, 1 tbsp olive oil, 1 tsp sugar and 1 tsp kosher salt until sugar dissolves.
  3. Pour dressing over shredded vegetables, add chopped cilantro, toss thoroughly and serve immediately.

5. NOTES & ASSUMPTIONS

  • Optional table-side items: hot sauce or sliced fresh jalapeño for adults (served at table only — base spice level is mild).
  • Global substitution: if fresh cilantro is unavailable, use 2 tbsp finely chopped parsley (flavor will shift but still fresh); mark in head recipes where cilantro is referenced.
  • Child-safety notes: Frying plantains uses hot oil — keep children away from stove during frying and when oil is hot. Use tongs and keep skillet handle turned inward.
  • Explicit timeline risk(s): The tightest execution window is the simultaneous finish of the roast resting, the last batch of fried plantains, and dressing the slaw in the final 10 minutes. This requires prepped mise en place and the fryer at temperature on time.
  • Practical mitigation mindset: Do all chopping and mise en place during the roast window (3:50–4:35). Have the oil heating ready at 4:45; start heating slightly earlier if you need a cushion. Assign one short sequence: while oil is coming to temp, dress slaw (2 minutes) and then fry batches without delay.
  • Latest safe start time: You can start as late as 3:37 PM for a 5:00 PM serve.
